Martelli Spaghetti is made by slowly kneading the finest durum wheat semolina with cold water, using bronze dies to roughen the texture. It is then dried at a “traditional low temperature” (33-36°C) for approximately 50 hours (depending on weather conditions).
The Martelli pasta factory is located in Lari, near Pisa, and is a family-run business that combines long-standing professionalism with a passion for continuing to produce pasta according to Italian artisanal traditions.
