Mezze maniche made with Senatore Cappelli wheat are produced with a careful selection of organic ingredients and are a blend of the lands of Puglia and Trentino: the wheat that grows beneath the rocks of Matera, and the water and air of the Trentino Dolomites, where the Felicetti pasta factory operates.
This variety of Apulian wheat is one of the finest grains available and has many nutritional benefits, being rich in high-quality, highly digestible proteins. It also has antioxidant properties and does not cause gluten sensitivity, preventing the development of gluten intolerance that could lead to celiac disease.
SENATORE CAPPELLI WHEAT:Senatore Cappelli durum wheat owes its name to the Abruzzo senator Raffaele Cappelli, a promoter of agrarian reforms and the revival of agriculture in Puglia in the early 20th century. He supported the research of geneticist Nazareno Strampelli, making available to him experimental fields he owned. This is how, at the beginning of the 20th century, Senatore Cappelli durum wheat was born, a highly adaptable and high-quality product that can only be grown organically.
Mezze maniche, like all large pasta shapes, are ideal for bold sauces such as beef ragù, salsas, or Corbara tomato and vegetable purees.
