Pecorino Gran Riserva represents the oldest Tuscan agricultural tradition.
The large cheese wheels intended for long aging were produced during the spring milk season and were part of the farming family’s food supply.
Even today, Pecorino Gran Riserva is produced in the months of March, April, and May, when the milk is rich in flavors and aromas. The rind is firm and yellow, the cheese is compact yet tender when cut, and its complex and intense aroma leads to a bold and persistent flavor.
It can be paired with fresh fruit such as figs, pears, grapes, or dried fruit such as walnuts and almonds. It pairs well with fine wines such as Brunello di Montalcino and Nobile di Montepulciano.
