Pecorino di Pienza morchiato

Morchia or fondata is the thick layer that remains at the bottom of terracotta jars in which olive oil is placed during the winter after pressing the olives to be preserved until the following year.
Today, as per rural tradition, fondata or olive oil with charcoal is used instead of ash to grease the cheese wheels, creating a thick coating that allows for a long aging process. It is a pecorino with an intense aroma and flavor, and a pleasant savory texture.
It pairs ideally with full-bodied white or red wines. It is the ideal ingredient for the Pici Cacio e Pepe recipe.
