Frico Savio offers a selection of recipes to make an optimum frico, which we distinguish from the geographic area of the Friuli region where it is made.


CARNIA

Ingredients for 4-6 people:
4 peeled and boiled potatoes; 350 gr of Montasio cheese (aged 2-3 months).


In a non-stick pan, add the boiled potatoes (broken with a fork) and the cubed cheese. Cook at medium heat, while mixing the ingredients with a wooden spoon, having it cook evenly from all sides. If the cheese is not seasoned enough, add salt and pepper to taste.



TRICESIMO

Ingredients for 4-6 people:
400 gr. of Montasio cheese (aged one-month); 100 gr. of Montasio (mezzano?) (aged 6-8 months; 1 white onion; 1 kg. of potatoes; ½ cup of extravirgin olive oil; 30 gr. of butter; salt and pepper.


Cut the onion into small pieces; julienne the potato into thin slices or grate them into fine slices. Sautée the onion in a pan with the extravirgin olive oil and butter, add the potatoes and brown. Add the less aged cheese (cut into cubes), and the more aged cheese (grated) to the potato and onion mixture. Mix until the cheese begins to melt and form a frittata (omelette consistancy). Remove any excess oil from the pan when a crust has begun to form by pressing down with a wooden spoon. Flip the frico mixture to cook the opposite side. It should be cooked over medium heat to ensure a crust forms without burning. The cooked result will be a frico “torte”. Serve hot. Preparation time approximately 1 hour.



CIVIDALE

Ingredients for 4-6 people:
500 gr of Montasio cheese (aged 3 months); 1 large tomato, 2 tablespoons of extravirgin olive oil.


Skin the tomato, and cut into tiny pieces. Heat the oil over medium heat and add tomato to the heated pan. Salt lightly. Cook the tomato half way and add the cut cheese. The mixture is cooked when the juice of the tomato has absorbed; it must be served immediately with hot polenta.



FRIULI CENTRALE

Ingredients for 4-6 people:
600 gr Montasio cheese (aged 5 months); 3 Golden apples, salt, pepper, 1 teaspoon extravirgin olive oil.


Peel the apples, cut them into thin slices and brown them in a non-stick pan with hot oil. Salt and pepper the apples but ensure that they do not cook too much or they will melt. Add the previously cubed cheese to the apple mixture and cook over medium heat. Brown both sides of the mixture forming a crust and slide onto a plate to serve.



PORDENONE

Ingredients for 6-8 people:
5 potatoes, 600 gr of Montasio cheese, extravirgin olive oil.


Peel the potatoes and grate them finely, as you would carrots. Heat oil in a pan and add the potatoes immediately so they do not turn brown. Cook over low heat so ensure that the potatoes remain white. When they are cooked, add the cubed cheese. When the mixture becomes compacted and golden, flip and cook the opposite side. After a few minutes the frico is ready to serve.
